A little trailer sits on the side of the road in front of a farm. It uses the ingredients from the farm to whip up some simple, satisfying Mexican food.
Bubby’s Burrito Stand [193 W Market St, Red Hook, NY 12571] is all vegetarian. You can get a rice and bean burrito with lettuce, tomato salsa, cheese, and sour cream. It will run you $5.50. You can add guacamole – which was just a hunk of avocado, for an extra dollar. There are also cheese quesadillas, and agua fresca. We ordered the guac burrito which came out in a jiff, watermelon juice was self service, and grabbed some complimentary spicy sauces and pickled veggies to take to a table behind the trailer.
It was a hunky burrito, really packed with a lot of rice and beautiful mashed black beans. The veggies were fresh, but the most overpowering and exciting ingredient had to be the charred tortilla…and the green view.
It was a filling and comforting meal in a funky locale, a fun little spot when visiting the area.
